Ingredients:
- 1 cup oat flour
- 2 tablespoons finely chopped curly parsley (do not use Italian Parsley)
- 2 tablespoons finely chopped mint
- ½ cup unsweetened applesauce
- 1 egg
Method:
1.) Pre-heat oven to 350°F (175°C). Line baking sheet with parchment paper to prevent treats from sticking.
2.) Finely chop parsley and mint leaves. Fresh herbs are the best, if using dried, use half the amount.
3.) In a large bowl, combine all the ingredients. Stir everything together until you have a slightly sticky dough. If it’s too dry, add a splash of water until you reach the right consistency.
4.) Take a spoonful of dough and roll it into a small ball, then flatten it slightly to form a biscuit. Place on baking sheet with some space in between.
5.) Bake biscuits for 15-20 minutes or until they are firm and lighlty golden.
6.) Cool completely and serve!
